All you need is some of the paste that can be kept ready a day advance so that you stir up this recipe quickly. The rice has the richness of all the nutrients and can be easily packed for your lunch box.

Raw papaya is a powerhouse of enzymes and nutrients and is really good for skin and hair.

Ingredients

For Curry Paste

    3 Lemon Grass, pruned and chopped
    4 Dry Red Chillies, soaked in warm water
    2 Garlic
    1 Ginger
    1 Coriander (Dhania) Seeds
    1/2 Turmeric powder (Haldi)
    2 Water, as required

For Fried Rice

    4 Spring Onion (Bulb & Greens), finely chopped
    2 Red Bell pepper (Capsicum), finely chopped
    2 Cooked rice
    2 Raw papaya, grated
    1/2 Roasted Peanuts (Moongphali)
    Salt, to taste 
    6 Basil leaves, torn

Instructions for Thai Style Raw Papaya Fried Rice Recipe

    To begin making the Thai Style Raw Papaya Fried Rice Recipe, prep all the ingredients and keep ready.

    Take all the ingredients for the curry paste, add to the mixer grinder and blend to make a coarse paste. Add very little water.

    Heat oil in a kadai on medium heat, add spring onions, chopped bell peppers, raw papaya and saute till they turn soft.

    Add thai curry paste and salt and mix it well into the vegetables.

    At this stage you can add the cooked rice and toss well into the raw papaya. Stir well to combine and saute on high heat for 2 to 3 minutes.

    Check the salt and seasonings and adjust according to taste. If the seasoning is perfect, turn off the heat and add chopped basil leaves and peanuts and serve hot.
