Filter coffee is common in many of our households, especially in South Indian households. We generally prefer the first or second degree coffee and most of the time third degree coffee is never prepared and this mild flavour decoction is wasted in many households.
Today’s recipe is with this third degree decoction. Ragi, wheat flour, 3rd degree coffee decoction, palm sugar, cocoa & other baking ingredients are mixed and poured into a claypot cup. The mix is then kept in microwave for a minute to get this fluffy “Ragi Choco Coffee Mug Cake”.
This is eggless hence I had added apple cider vinegar. When baking soda is combined with vinegar the chemical reaction between them would lift up the fluffiness of the flour. Do not use plain vinegar as they would turn the cake a bit salty and you can actually smell the vinegar. Apple cider vinegar on the other hand is flavourful and at the same time good for health.
Serve Ragi Choco Coffee Mug Cake along with a hot cup of Coffee Latte during your Tea time. You can also serve it as a dessert after your Continental meals.

To begin making the Ragi Choco Coffee Mug Cake Recipe, prepare the filter coffee in the regular way by adding 5 scoops of filter coffee and less than 1/2 cup boiling water.
Once the decoction is brewed, use them as first degree coffee. Repeat the same process to get the second & third degree decoction. We will be using the third degree decoction.
Take 3 tablespoons of decoction and mix it with 1 tablespoon milk. Keep it aside
Add ragi flour, wheat flour, palm sugar in a bowl and mix them well. Add ghee to this and mix well again.
Add baking soda, baking powder and apple cider vinegar. Just mix them for a second. Add the coffee mix and mix well.
Add the cocoa powder. This can be added along with the dry ingredients also. Mix all of them without any lumps.
Add 1 tablespoon of choco chips and give it a mix. Transfer them to a claypot mug or regular microwave mug.
Sprinkle the remaining choco chips. Microwave high for a minute. Make sure the cup is only filled with 3/4th of the mix else they would spill.
