    1 Basmati rice
    3 Ghee
    1 Bay leaf (tej patta)
    1 Cinnamon Stick (Dalchini)
    1 Cumin seeds (Jeera)
    4 Cloves (Laung)
    2 Dry Red Chillies, broken
    1 Brown cardamom (Badi Elaichi)
    1 Whole Black Peppercorns
    1 Onion, thinly sliced
    1 Ginger, finely chopped
    4 Garlic, finely chopped
    2 Tomatoes, finely chopped
    1/2 Turmeric powder (Haldi)
    1 Coriander (Dhania) Powder
    1 Kashmiri Red Chilli Powder
    1/2 Garam masala powder
    1/2 Curd (Dahi / Yogurt)
    1 Green peas (Matar)
    1/4 Coriander (Dhania) Leaves, finely chopped
    Salt, to taste

    To begin making Matar Ki Tehri, prep all the ingredients and keep ready

    Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain and keep aside.

    Heat ghee or oil in a large pot. Add cumin seeds and all the spices from bay leaves, cinnamom, cloves, cardamom, badi elaichi and let them splutter and the aromas come through.

    Add finely chopped onions, ginger and garlic to the pot and sauté until golden brown.

    Mix in chopped tomatoes, turmeric powder, coriander powder, red chili powder, and salt. Cook until tomatoes soften and ghee starts to separate.

    Add fresh green peas and stir. Then, add the drained rice and mix well to coat the rice with the spices.

    Pour in yogurt and 1-1/4 cups water, stirring to combine.

    Close the lid of the cooking pot simmer for about 20 minutes in a pot until the Matar Ki Tehri is cooked and water is absorbed.
