I was apprehensive with my experiment and could not believe the results until I tasted it! Ingredients

    450 Ripe Bananas, pureed
    525 Coconut milk
    1/4 Sugar
    1/2 Rum
    1/2 Lemon juice, Juice from half a lemon
    Salt

    To begin making the Coconut Milk Ice Cream, blend all the ingredients together and make a fine puree. If you have an ice-cream maker, add the puree to it and follow the instructions to make the ice cream.

    Else you can pour the mixture into a freezer proof bowl, cover airtight and freeze until set. Once frozen, beat once again thoroughly using a blender and refreeze until set. This takes about 12 to 15 hours.

    The Gluten Free Banana Coconut Milk Ice Cream is now ready to be served. You can optionally top with freshly shredded coconut and may be bananas too and nuts too.
