Fish is said to be the best protein one can intake, low in fats and super high in Omega fatty acids, fish is excellent for health. Salmon is a fish which has a beautiful and unique flavour and hardly needs a lot of stuff to be done to it. More often than not a quick grill with salt, pepper, olive oil and lemon is the only thing I do but then when I want to make a little more detailed Salmon dish this is what shines in my kitchen. Grilled with thai spices wrapped in a foil and served along with chilli noodles and sautéed broccoli is a perfect dish for the sit down dinner with a glass of wine and it's super healthy when compared to the usual indulgent weekend choices we make.

Serve the grilled salmon over chilli noodles with broccoli on the side and a glass of  Watermelon-Cranberry Mocktail Recipe and Fresh Garden Salad Recipe enjoy a perfect Saturday meal.

Ingredients

For the noodles

    400 Salmon fillet, (indian Salmon works fine)
    1 Sesame (Gingelly) Oil
    1 White Wine Vinegar
    1/2 Fish sauce
    1/4 Lemongrass
    1/2 Ginger, ground
    1/2 Garlic, ground
    1/2 Red Chilli flakes
    1/4 Lemon zest
    1/4 Whole Black Peppercorns, freshly ground
    1 Hakka Noodles, boiled
    1 Sesame (Gingelly) Oil
    1 Red Chilli flakes
    1 Garlic, ground
    1 Ginger, ground
    1 Soy sauce
    1/2 Vinegar
    Salt, to taste

For the broccoli

    1 Broccoli, chopped into small florets
    1 Extra Virgin Olive Oil
    Salt, to taste
    1 Whole Black Peppercorns, freshly ground

Instructions for Broccoli Chilli Noodles With Grilled Salmon Recipe

    To begin making the Broccoli Chilli Noodles With Grilled Salmon recipe, mix together all the ingredients for broccoli and grill in a preheated oven at 180 C for 15 minutes.

    You can also stir fry the broccoli in a wok/kadhai at high heat till it is nicely browned.

    Mix all the salmon ingredients i.e sesame oil, fish sauce, rice wine vinegar and all the spices in a small bowl. Whisk well and keep aside.

    Keep the salmon fillets in a foil and pour the spice mixture over salmon.

    Close the foils from all four sides sealing the salmon fully.

    Grill in a preheated oven at 180 C for 10 to 12 minutes. Open and broil for 2-3 minutes till slightly caramelized.
